Grand Marnier Soufflé
From Margaret's old recipe box.
Ingredients:
3/4 cup sugar
3 envelopes Knox Gelatin
1 1/4 cups milk
8 egg yolks slightly beaten
1 1/4 cups orange juice
1 1/2 Tablespoons grated orange rind
8 egg whites
3/4 cup sugar
3/4 teaspoon cream of tartar
1/2 cup Grand Marnier
1 1/2 cups heavy cream, whipped
Procedures:
Let eggs warm to room temperature. Make a paper collar for a 2-quart soufflé dish by folding a 27" piece of waxed paper in half length-wise. With a string, tie the collar around the dish to form a 2" rim above the edge.
Combine 3/4 cup sugar, gelatin, milk and egg yolks in a medium saucepan, Cook over medium heat stirring constantly until mixture comes just to a boil. Do not boil. Remove from heat. Cool Put into a large mixing bowl. Add juice and rind. Let cool in fridge until it mounds slightly. Beat egg white, cream of tartar and sugar until stiff. Fold into egg mix. Add liqueur and whipped cream.
