HOT MILK SPONGE CAKE
Though this is delicious by itself, it can benefit from a sauce or topping.
Ingredients:
4 eggs
2 cups sugar
2 cups flour
2 teaspoons baking powder
2 teaspoons vanilla extract
pinch of salt
1 cup milk
1/4 lb butter
Lemon Drizzle [optional]
Procedures:
Create the dry ingredients mixture by combining sugar, flour, baking powder and salt in a large bowl.
Beat the eggs in a small bowl and add the vanilla.
Combine the milk and butter and heat to boiling.
Whisk the egg mixture into the dry ingredients
Slowly add the butter/milk mixture and stir until mixed
Pour into a greased and floured tube pan.
Bake at 350o for 45-60 minutes.
Notes:
2023-06-15: The cake fell apart in the pan and was frozen in chunks, possibly because the pan was coated with sugar instead of flour.
2022-04-23: Made and frozen for future use.
2020-07-18: Excellent! Half to the freezer.
2019-12-15: Made for Christmas.
2017-12-18: Time was increased from 45 minutes to an hour.
