CALF'S LIVER
 
Ingredients:
1 pound calf's liver
1/2 lb. bacon
1 yellow onion
1 Granny Smith Apple, sliced
1 cup flour
2 Tablespoons Sherry
Sour cream for garnish
Procedures:
Soak liver in milk.
Slice the onion into thin half-moon rings
Fry the bacon until crisp
Remove the bacon, but retain the fat.
Rinse and pat dry the liver and sprinkle with S&P; dredge in flour
Sauté the onion and apple splices until tender and remove
Fry the flour-coated liver until crisp, turning midway.
Remove liver and keep warm.
Deglaze the pan with sherry, loosening any brown bits in the pan
Return the onions to the pan and add 2-3 Tablespoons of sour cream
Stir into a sauce
Plate the liver and top with the onion sauce.
Notes:
2021-11-17: Served with corn and a bottle of MAN Pinotage.
2021-02-24: Five pieces of liver were served with bacon and the apple fried in the bacon drippings. It was accompanied by Mac & cheese Wyomissing.
2020-09-16: Served with fried apples in the onions, and Parmesan-roasted cauliflower with a bottle of CSM Riesling.
2020-01-04: We added a Granny Smith to the recipe. Was to have been served with asparagus, but we forgot them in the toaster oven. An excellent entree, but not too often. We included a bottle of 19 Crimes Red Blend.
2018-05-27: Served with leftover roasted cauliflower.
