Corn Beef Brisket - Boiled
This recipe was separated from New England Boiled Dinner. There is also a baked version.
Ingredients:
4 lb. Corned Beef Brisket
2 cups chicken stock
water to cover
Procedures:
Submerge the brisket in the chicken stock and enough water to cover and boil 3 hours or until tender.
Remove the brisket from the water and drain.
It can be served hot or chilled and sliced thinly, as desired.
Notes:
2023-05-27: Served with Red Onions and a carrot soufflé.
2023-03-17: An excellent batch for St. Patrick’s Day with Red Cabbage, and Red Potatoes.
2021-03-17: when the brisket came out of the water, the layer of fat was scraped off and discarded.
2020-03-17. We boiled a brisket and then threw away a third as fat. The remaining meat was a bit salty and was served with boiled cabbage.
2019-03-16: boiled in chicken stock for St. Patrick’s Day, the following day.
