Poisson Poche [Poached Fish]
Ingredients:
8 ounces mushrooms, sliced
1.5 lbs fish filets (flounder, tilapia, haddock)
1 Tablespoon EVOO
2 garlic cloves, minced
2/3 cup chicken broth
2 Tablespoons lemon juice
1/2 teaspoon paprika
ground black pepper
2 Tablespoons parsley
Procedures:
Saute the mushrooms in EVOO and set aside.
Combine the EVOO, cloves, chicken stock, lemon juice and paprika in the same pan.
Poach the fish to desired doneness.
Add the mushrooms and heat through.
Season to taste and garnish with parsley.
Notes:
2025-06-09: Two pieces of flounder were served with roasted asparagus and a Fetzer Gewurztraminer.
2025-05-05: 3 flounder filets were poached, though we could have used more. We’ll add a spritze of lemon juice to the finished product, and served with air fried asparagus.
2022-07-16: We used 3 pieces of Flounder and served with baked tomatoes.
2020-06-17: Four pieces of flounder were poached and served with baked tomatoes and baked beans.
