Bourbon-Glazed Salmon
This was grilled on the stove top. There is an older pan sauteed recipe
Ingredients:
1/2 cup bourbon
2 T maple syrup
2 T brown sugar
1 T Worcestershire
1 T Soy sauce
Garlic
1/2 t apple cider vinegar
1/4 teaspoon freshly ground black pepper
4 (6ounce)skinless salmon fillets
Cooking spray
1/4 cup thinly sliced green onions
1 tablespoon sesame seeds, toasted
Procedures:
Combine first 7 ingredients in a large ziptop plastic bag.
Add fish to bag; seal. Marinate in refrigerator 1 1/2 hours, turning occasionally.
Heat a large nonstick grill over medium-high heat, coated with cooking spray. Grill the fish 4 minutes on each side or until fish flakes easily when tested with a fork or until desired degree of doneness.
Serve with a sprinkle of 3/4 teaspoon sesame seeds.
Notes:
2022-07-02: A poor piece of salmon, served with mashed potatoes, glazed carrots and a bottle of red wine.
2021-10-09: FREEZER ERROR! The salmon was frozen in the brown paper packaging in which it was received, and, when unwrapped, was desiccated. The marinade didn’t save it. Nor did poaching instead of pan frying. We’re going to offer it to Kate for Tess.
2021-06-25: salt and pepper the salmon first
2020-04-18: The marinade included dry ground ginger rather than fresh. Lyd grilled the filets on the stovetop grill, discarding the marinade. Served with grilled pineapple rings, broccoli florets and a bottle of Barefoot Riesling.
