Panko Scallops 2012-05-28
We adapted this recipe from a crunchy shrimp recipe from a Disneyland version.
Ingredients:
5-6 Sea Scallops per person
1/2 cup All-purpose flour
2 eggs, beaten
3 cups Japanese panko bread crumbs
Salt & pepper to taste
Cayenne Pepper to taste
Canola or peanut oil
Procedures:
Put sufficient oil into a frying pan so the scallops will be covered.
Combine panko bread crumbs, salt, pepper, and cayenne.
Lightly flour the scallops.
Dip each scallop in the beaten egg.
Coat with bread crumbs.
Fry the scallops, a few at a time, for 2-3 minutes.
Notes:
2023-01-16: The Panko didn’t stick to the scallops, so Lyd added some Italian breadcrumbs which worked very well, Served with leftover red potatoes and a bottle of Riesling.
2019-07-05: With scallops from Adelphi’s: excellent. Also good, cold, the next day with cocktail sauce.
2015-06-10: 1 pound for the two of us excellent.
2014-06-06: The coating came off AGAIN! Maybe the oil wasn't hot enough. We served this with an Orange Pepper sauce and Brussels's Sprouts.
2012-01-13: The coating came off and we don't know why! The flavor was good, but the coating came off. We served it with Jiko Salad.
