Steak Diane 2012-06-01
A favorite in the Welsh Kitchen. There is a previous version.
Ingredients:
1 T Olive Oil
2 T Butter
1/2 cup chopped shallots
1/3 cup beef stock
1 T Dijon Mustard
2 t fresh lemon juice
1 t Worcestershire
2-3 Filet Mignons!
Procedures:
Slice the steaks as thin as possible; the thinner the better.
Melt the butter and add the Olive Oil.
Sauté the shallots until softened.
Add the beef stock, mustard, Worcestershire and Lemon Juice and boil for 1-2 minutes.
Reduce heat.
Add the steaks to the pan and simmer until done.
Serve, pouring the sauce over the steaks!
Notes:
2023-10-06: Made for Bill’s visit.
2023-01-25: Served with Brussels Sprouts, mushrooms, baked potato and a Pinotage.
2022-08-06: Served with mashed potatoes and roasted Brussels Sprouts.
2021-10-08: Two thick filet mignons were served with mashed potatoes, Brussels Sprouts and a bottle of Radley & Finch Pinotage. We didn’t flame the Cognac, and that flaming step will be removed from the procedures.
