Corn Salad
Ingredients:
2 cups Fresh or frozen corn
1/2 c Mayo
2 T pepper relish
Dash s and p
Procedures:
Combine all ingredients and chill, allowing the flavors to blend.
Notes:
2023-05-05: We used a pint of corn from the freezer.
2021-03-03: A little picante sauce was added, along with a nice dose of fresh parsley and dill.
2020-06-10: We made a batch using the mature corn from earlier in the month.
2020-02-20: Frozen corn was used. Served as a side to Yardley’s crab cakes and roasted pesto tomatoes.
2020-02-13: Added to our cookbook.
