Amish Slaw
Here is the original.
Ingredients:
1 bag slaw mix
1 medium onion, finely chopped
1/2 cup white sugar
1/2 cup vinegar
1 teaspoon salt
1 teaspoon celery seed
1 teaspoon white sugar
1 teaspoon prepared mustard
3/4 cup vegetable oil
Procedures:
In a large bowl, toss together the slaw mix, onion, and 1/2 cup sugar.
In a small saucepan, combine the vinegar, salt, celery seed, 1 teaspoon white sugar, mustard and oil.
Bring to a boil, and cook for 3 minutes. Cool completely, then pour over cabbage mixture, and toss to coat.
Refrigerate overnight for best flavor.
Notes:
2022-03-20: another batch
2020-11-14: Another excellent batch.
2020-10-03: A batch served with a braised pork shoulder. The sauce, initially very vinegary, was excellent once added to the slaw.
2019-01-12: I cut the sugar in half, using 3/4 of a bag of slaw mix, but didn’t cut the vinegar from 1 cup; too vinegary.
