Layered Mexican Dip  
Ingredients:
1 can refried beans
1 cup salsa
1 container guacamole dip
6 Tablespoons mayonnaise
4 Tablespoons sour cream
1/2 package taco seasoning
1 cup shredded cheddar cheese
1 cup shredded Monterey Jack cheese
1 bunch scallions, diced
6 Campari tomatoes, chopped [~1 cup]
1 cup sliced black olives, drained
1 large bag of taco chips
Procedures:
In a souffle dish, combine bean dip and taco sauce and spread over the bottom of the dish.
Cover with a layer of guacamole.
Combine mayo, sour cream and taco seasoning and spread over the guacamole.
Combine cheeses, onions, tomatoes and olives and spread on top.
Serve with taco chips.
Notes:
2024-01-20: By request, this was made for Game Day at SKDL’s. The market didn’t have enough chips, so we supplemented with scoop-style Fritos.
2023-11-24: At Kate’s request, we contributed to their Black Friday Party.
2023-09-09: Made for the KDL birthday celebration. Next time: increase black olives and guacamole.
2023-06-17: We made a batch for the Fathers’ Day celebration at SKDLs’, but didn’t attend as are both experiencing cold symptoms and didn’t want to infect Corvita or Isaiah Martin.
