Red Onion Slices Microwaved
This is the microwave version. There is also an oven version.
Ingredients:
2-3 Red Onions
1-2 tablespoons Balsamic Vinegar
1-2 tablespoons Extra Virgin Olive Oil
1-2 tablespoons Honey
Salt and Pepper
Procedures:
Peel and slice the onions into 1" thick slices.
Put the slices in a microwave-safe dish, and drizzle with vinegar, oil and honey.
Microwave, covered, on high power, 15 minutes.
Notes:
2023-08-25: Served with a beef tri-tip, I mis-read the timing and overcooked the slices.
2023-05-27: Served as a side for a Corned Beef Brisket, a single onion was nuked for only 5 minutes.
2023-01-20 We used 1 red onion, cut into 2 1” slabs. Dressed with the Balsamic, EVOO, and honey, they were microwaved for 5 minutes which was sufficient.
2020-11-01: OVERCOOKED! The flavor was good, but I cut back to one onion and didn’t reduce the cooking time. Next time, we’ll start at 5 minutes per onion and check the doneness.
