FLUFFY WHITE RICE
This first came from Southern Living Complete Quick and Easy Cookbook: 2009.
Rinsing the rice before cooking reduces its starchiness, making it fluffy, not sticky.
Ingredients:
1 part uncooked long-grain rice [i.e. 1 cup]
1.5 parts water [i.e. 1.5 cups]
[Chicken stock or orange juice may be substituted for part of the water] 1 t vegetable oil
Note: The quantities are not critical as long as the ratio is followed.
Procedures:
Place rice in a large strainer and rinse with water, generously, until water is no longer cloudy; drain.
Bring the rice, water and oil to a boil.
Cover, reduce heat, and simmer 15 minutes or until rice is tender.
Remove from heat, and let stand 10 minutes. Fluff with a fork.
Notes:
2019-03-15: A double order made to go with Chicken Chow Mein, using 1 cup of chicken stock and 2 cups of water.
2018-10-17: Served under Seafood Newburg
2018-06-03: with 1 cup of chicken stock for 1 cup of the 1.5 cups of water with 1 cup rinsed rice; with chicken chow mien.
2017-01-29: with peachy pork picante.
