Jasmine Sticky Rice |

Ingredients: |
1 cup organic jasmine rice
2 cups clean water (or chicken broth for more flavor)
1/2 tablespoon organic, unsalted butter
|

Procedures: |
Measure 1 cup of jasmine rice and pour it into the strainer.
Rinse the rice well, until the water from it runs clear. (You can also cook the rice without rinsing it to make it extra sticky, but I like to rinse mine.)
Put the rice in a small pot. The rice should only fill half of the pot because it will double in size!
Measure 2 cups of water and pour it into the pot with the rice. (You can use chicken broth instead of water for more flavor if you like!)
Put 1/2 a tablespoon of unsalted butter in the pot with the rice and water.
Put the lid on the pot and set the temperature to high.
When the water starts to boil, reduce heat to medium-low. (You may have to temporarily tilt the lid to release some of the steam if the water is about to boil over the sides.)
Simmer with the lid on for about 5 minutes on medium-low heat, or until the water is absorbed.
Scoop a small amount of rice out with a fork or spoon. Let it cool and eat it to determine if it is ready. If the rice is still hard, keep cooking it. If it needs more water, add about half a cup more of water. Put the lid back on and cook for a couple more minutes.
When the rice is soft, it is done! Do not overcook!
Remove the rice from the heat and tilt the lid to release some steam. Let it sit like this for about 10 minutes.
Stir and fluff up the rice with a fork.
