PEPPER SHRIMP WITH RICE 2010-12-08
 
Ingredients:
1 lb Shrimp, Large
Fluffy white rice
8 oz. Canned Black Beans, drained
2 oz. Canned Chilis, mild, chopped
2 oz. Canned Pimentos, drained and chopped
1/4 Cup Fresh Parsley
1/4 t Red Pepper Flakes
1/2 t Garlic Powder
1/2 t Adobo Seasoning
3 T Butter
Procedures:
Arrange shrimp in a baking dish.
Season the shrimp with garlic powder and Adobo seasoning.
Cook the Fluffy white rice.
Stir in beans, chilies and pimentos.
Add 3 T minced parsley.
Heat through.
Mix butter, ground pepper and 1 T parsley.
Brush shrimp with butter mix.
Bake at 400o for 15 minutes, basting with more sauce.
Plate the rice and shrimp, pouring any drippings over and serve.
Notes:
2015-02-13: This just didn't seem to work. The time to bake the shrimp was doubled and the ingredients were all good, but the initial result was mediocre, though it was better as a leftover, with Soy sauce added.
2013-01-13: We halved the ingredients. This could be baked in the toaster oven. Dirty rice might be better. Add lemon juice to the shrimp, shallots/onions to the rice.
2010-12-08: Very good; broiled.
2009-08-28: This went well, but we changed it.
